Easy Baked Salmon

Prep Notes

Try to soak salmon in olive oil for a day. Tip and Trick is I always soak the fish in the am so that when its dinner time its ready to go.

Ingredients

  • 2  6-8 ounce Wild Caught Salmon Filets
  • Organic Extra Virgin Olive Oil - (use Nunez De Prado)
  • 2 Shallots 
  • 3 organic tomato’s chopped or package of organic Wild Wonders tomato medley chopped 
  • 1 Lemon juiced 
  • Salt & pepper 
  • Pinch of oregano 
  • Pinch of thyme 
  • Organic capers 

Directions

  1. Place Salmon in bowl and drizzle olive oil all over and season with salt and pepper. Let sit for at least 15 minutes. Recommend letting sit for the day and prep in am. 
  2. Chop 2 shallots and tomatoes
  3. Add chopped shallots and tomatoes to bowl and add pinch of oregano, pinch of thyme, juice from 1 lemon, and about half jar of capers. I also add a little of the caper juice to the mix. Refrigerate until ready to cook. 
  4. Wrap each salmon in aluminum foil & spoon tomato mixture on top of them. Wrap them up and Bake at 425 for about 35 minutes. Check at 30 minutes by opening foil and seeing if more time is needed depending on how you like your salmon cooked. 
  5. Enjoy! 

Notes

Pair this with bok choy to enhance calcium absorption to support strong bones. I also pair with quinoa or cauliflower rice on days I am feeling extra hungry.
