Massaged Kale salad with Lemon Garlic Vinaigrette

Prep Notes

Make sure you massage the kale till it breaks down. Start with a small amount of dressing and then add more to your liking.

Ingredients

Salad:

  • 1 bunch organic lacinato kale 
  • 1/2 cup chopped organic walnuts
  • 2-3 shaved organic sun-choke & watermelon radish ( I use a peeler to get them super fine)
  • 1/2 cup freshly shredded organic parmesan cheese from wedge 


Salad Dressing: 

Lemon Garlic Vinaigrette

Prep TIme: 10 minutes 

Yields: 10 servings 


  • 1/2 cup olive oil (use Nunez Organic Extra Virgin Olive Oil)
  • 1/4 cup cider vinegar
  • 3 cloves garlic, grated 
  • 1 lemon, juiced 
  • 1 tsp dried thyme 
  • 1 tsp salt 
  • 1/4 tsp pepper
  • 1 tsp dijon mustard
  • 1 tbsp honey 

Combine all the ingredients in a mason jar with a tight fitting lid. Shake well.

Store in fridge for up to a week

Directions

  1. Add the sliced kale to a medium-size mixing bowl or salad bowl, drizzle on a little dressing and lightly massage it for 1 minute to help break it down a little. 
  2. Add 1/2 cup of chopped walnuts, 2-3 shredded radishes, 1/2 cup of parmesan cheese and lightly toss everything together. 

Notes

If the dressing gets solid in the fridge, just let it come to room temperature, and shake before serving.
