Ingredients

Directions

  1. Put the Wild caught salmon in a bowl and add about 1 tablespoon of olive oil. Season with salt and pepper. Cover and place in the fridge.
  2. Warm grill up on high heat, 450-550 F. Brush the cooking crates clean and close the lid to heat.
  3. Grill the salmon skin down over direct high heat with lid closed, for about 6-8 minutes or until the fish lightens in color, becomes more firm to the touch and you can lift the fillets off the cooking crates without them sticking. Turn the salmon over, close the lid, cook for about 4-6 minutes or longer to desired tenderness.
  4. Let sit for 2 minutes then juice one lemon wedge on top of each salmon and spread some tzatziki sauce and garnish with capers. Enjoy!

Notes

It's best to soak the salon in the olive oil for at least 1 hour. I find it even better if I know I am making this the day of and soak it in the olive oil in the am.

I like serving this with Organic Baby Bok Choy combing a vitamin D source, like salmon, with a calcium source, like bok choy, will help to enhance calcium absorption to support strong bones and reduce the risk of osteoporosis.
